Buddha Bowls

Okay, I love this. It's not even an actual recipe because you can build your own with whatever you want. I plan to make it over the weekend.

Buddha bowls are literally small portions of...as I said, whatever. You can pick your favorite vegetables, grains, protein, and dips. It can be vegetarian or not, but try to use at least one ingredient from each food group.


My version will be:

  • Roasted zucchini

  • Raw spinach

  • Cucumbers

  • Brown rice cooked in low sodium chicken stock

  • Cherry tomatoes

  • Marinated, baked tofu (I still haven't decided whether I like tofu, but I haven't tried the baked version yet)

  • Yogurt based ranch


I'm very very curious. I already have at least 3 different versions in mind.
